Very low G.I.
- 200g Cacao butter
- 40g Cacao powder
- 50g Shredded Coconut
- 2 Tbsp Lucuma
- 2 Tbsp Yacon
- Pinch Himalayan salt
- 18 Activated walnuts
In a metal bowl, over a saucepan of boiling water melt the cacao butter when melted remove from heat and add the shredded coconut, lucuma, yacon, salt. Mix this through until blended together.
Transfer the mixture into muffin trays of approx 1cm depth per serve. Press one activated walnut into the mixture of each brownie. Makes 18.
Place into the freezer for at least 30minutes.
